Losers' Fish turned Chicken Tacos

This is supposed to be Fish Tacos, but I used chicken. So So GOOD! Again, didn't take a pic and I apologize but if I make them again, or if you do- DO IT!


8 Taco sized corn tortillas (we used low fat flour, smaller-size tortillas)
1 pound Alaskan pollack cut into 1" pieces (we used chicken, cut up)
2 tablespoons Salt Free Mexican seasoning (I used Mrs.Dash Southwest Chipotle and recommend it!)
Salt, to taste
Olive oil spray (used regular olive oil)
2 cups slightly drained Coleslaw with Orange-Cilantro Vinaigrette (recipe follows)
1/2 cup fresh pico de gallo (everyone knows this recipe, if not, I'll post)
2 tablespoons chopped fresh cilantro

Season and cook the chicken, cut into strips.
Heat up tortillas.
Order: Chicken, topped with Coleslaw,topped with Pico de Gallo, fold to form tacos and ENJOY!!! Down with your favorite drink.

A party in your mouth for sure. You never knew such weird stuff put together could taste so good..

Coleslaw with Orange-Cilantro Vinaigrette:

1/4 Cup Fat Free plain yogurt
1/4 Cup Light Mayo
1/4 Cup squeezed orange juice
3 tablespoons White Vinegar
1 1/2 teaspoons Honey
7 Cups Shredded green Cabbage
1 Cup shredded carrots (you can buy them already shredded)
1/2 slivered red onion
1/3 Cup Fresh Cilantro, chopped
Salt, to taste
Ground Black Pepper, to taste

Whisk together Yogurt, Mayo, Juice, Vinegar, and Honey. Add the Cabbage, carrots, Onion, and Cilantro and stir until well combined. Season with salt and pepper to taste. Cover and refrigerate for at least 3 hours or up to 2 days. Makes 6 servings of 3/4 Cup

My version of Pico de Gallo:

Diced Tomatoes
Diced Onion
Diced Cilantro
Diced Jalapeno (less of this than the first 3 equal-amounted ingredients)
Mixed all this together and squeeze Lime Juice into it ( a good amount )
and Voila. Wait a while so that the flavors marinate. Also, the hotter you want it, the more Jalapeno seeds you allow into it.

This whole thing was some work, but well, worth it. Meals just taste so much better when you work hard to make them and they are healthy!!
