Hint O'Mint Cookies


These are some great little cookies. The recipe has a few unusual things, so I thought that I was sure to make some major mistake and totally screw them up, but they're tougher than my mistake-prone-ness. Kind of fun to make.


Hint O'Mint Cookies


1/2 cup butter, softened

1 cup sugar

1 egg

1/2 teaspoon vanilla extract

1/4 teaspoon peppermint extract

2 cups all-purpose flour

1/2 teaspoon baking soda

1/4 teaspoon cream of tartar

1/2 cup buttermilk


Frosting: (knowing how I like frosting, I doubled this, and it was just enough)

3 tablespoons butter, softened

2 cups confectioners' sugar

1/3 cup baking cocoa

1/8 teaspoon salt

1 teaspoon vanilla extract

2 to 4 tablespoons milk


In a large mixing bowl, cream butter and sugar until light and fluffy. Beat in egg and extracts. Combine the flour, baking soda and cream of tartar; add to the creamed mixture alternately with buttermilk, beating well after each addition. Cover and refrigerate for 1 hour or until easy to handle.


Drop by heaping teaspoonfuls 2 in. apart onto ungreased baking sheets. Flatten with a glass dipped in sugar (do this gently...and try to make sure the bottom of the glass is as covered with sugar as it can be, or else it will stick). Bake at 350 degrees for 6 to 8 minutes or until set. Remove to wire racks to cool.


In a small mixing bowl, beat the butter, sugar, cocoa, salt, vanilla, and enough milk to achieve spreading consistency. Frost cookies.

  1. I wanted to come straight here to see how they were made. They were THE absolute softest cookies I have ever had I am sure. They melted in my mouth and that hint of mint was awesome. They kind of reminded me of oreos (flipped) except extremely SOFT and homemade (which means Better in my book). Derek only got to eat one and I ate the rest of the plate...horrible I know- in only 2 days. My weakness!!
