Buffalo Chicken-Blue Cheese Meat Loaf

This Meat Loaf is super good! I enjoyed it so much and feel the need to make this again very soon. It is very healthy and that, with the taste, is beautiful.



It is Very Easy to make. (Even easier if you have a food processor to chop up all the veggies)

2/3 Cup Old Fashioned Oats
1/2 Cup Fat Free Milk
2 1/2 Tablespoons Buffalo Wing Sauce, or more to taste
1 pound extra-lean ground chicken
1/2 cup finely chopped celery
1/4 cup shredded carrot
1/4 cup finely chopped sweet onion
2 large egg whites, lightly beaten
1/4 teaspoon salt
2 ounce (bout 1/2 cup) Crumbled reduced fat Blue Cheese

Preheat the oven to 350.
Combine oats and milk and let stand 3 minutes or until oats begin to soften. Stir in the Buffalo wing sauce until well mixed. Add the chicken, celery, carrot, onion, egg whites, and salt. Mix Well. Add the blue cheese and gently mix to combine.

Transfer Mix to prepared pan and spread so top is flat. Bake for 30-40 minutes, or until chicken is thoroughly cooked and no longer pink. Cut and serve immediately!



I forgot to add the blue cheese in, so I just sprinkled it on top right before placing it in the oven. This was really great.
