This is the dessert I made when Derek and Irene came over. It came out pretty good, though a little sweeter than I would like. Kids would love this, and it's not difficult at all. The only thing that could have gone better is the corn flakes. They should be finely crushed, not just kind of crushed and mixed in...the whole pieces really harden when baking and become tough.
Ingredients:
1/2 cup butter, softened
1/2 cup packed brown sugar
1 egg
1 package (18-1/4 ounces) white cake mix
1 cup finely crushed cornflakes
1 cup strawberry jam
In a mixing bowl, cream butter and brown sugar until smooth. Add egg; mix well. Gradually add dry cake mix and cornflakes. Set aside 1-1/2 cups for topping. Press remaining dough into a greased 13 x 9 in. baking pan.
Carefully spread jam over crust. Sprinkle with reserved dough; gently press down. Bake at 350 for 30 minutes or until golden brown. Cool completely on a wire rack. Cut into bars.
I cannot not stress how GOOD these were! I mean, I usually am not much into desserts that don't have chocolate in them- but oh my gosh, these were something I will remember for a long time to come. I shall make these for some event in the future I'm sure!
ReplyDeleteYeah, I think it was the cake mix that made the crust sweet like that. it looks like it'd taste like strawberry pie or something, but then it taste more like...I don't know, strawberry cake cookies? The best part is, they're so easy. Apart from crushing the cornflakes, it only takes ten minutes or so to get everything else done.
