I made this the other night, and it was pretty good. The best part about it was that I had all the ingredients just lying around the house, plus it's a one pan wonder.
Beef Taco Skillet
1 lb. ground beef
1 can (10-3/4 oz.) Campbell's Tomato Soup
1/2 cup salsa
1/2 cup water
6 flour tortillas (6") cut into 1" pieces
1/2 cup shredded cheddar cheese
1. Cook beef in 10" skillet until well browned, stirring to break up meat. Pour off fat.
2. Stir in soup, salsa, water, and tortillas. Heat to a boil. Reduce heat to low and cook for five minutes. Stir. Top with cheddar. Makes 4 servings.
I didn't notice the part about 6 inch tortillas, and mine were much bigger. As a result, I ended up doubling the soup, salsa, and water, otherwise it wouldn't boil. Even so, I didn't like the tortillas much, they got too soggy. I think next time I might try it with corn tortillas. The flavor was really good, though, and it was so easy (no chopping, yay!).

ReplyDeleteI did try this recipe. I didn't have tomato soup so I just use tomato sauce. Also I replaced flour tortillas with corn tortillas and added corn to it. I thought it turned out great. The salsa really gives it a good flavor.
