California Roll

Ingredients

2 cups sushi rice*
nori sheets**
Imitation crab sticks
Avocado
Cucumber

*How to make sushi rice?
Ingredients:

3 cups uncooked short grain rice.
3½ cups water.
½ cup rice vinegar.
2 spoons sugar.
2 tbsp salt.
Preparations:

Make sure you get RICE vinegar because I didn't! I used red wine vinegar because I didn't want to go back to the store and it turned out okay, however, I'm betting it's better with the correct ingredient!
Mix rice vinegar with sugar and salt in a pan on medium heat until you get a solid mixture. (Mine never became "solid" but that could be because of the wrong vinegar, I just mixed it until it was more substantial than liquid, and it took maybe 10 minutes)
Make the rice like you normally would.

When the rice is ready, take it out into a large bowl.
Pour the vinegar mixture on the rice and mix well.
Let the rice cool down by the window, or next to fan (never in the fridge). Once it gets about room temperature you can start rolling.

**What is nori?

Nori (a.k.a laver) is a paper like, edible, toasted seaweed used in most kinds of sushi. The nori is the part that holds the sushi together.
It is stored in a moist free package, and must stay dry at all time until used.
I got it at Wal-Mart in the Asian food aisle for $2.50 or so.

HOW TO
Take half a nori sheet, and cover with rice - 1cm high.
Flip the nori so that the rice is facing down and start placing the filling for the California roll.
Line up the crab stick (I cut mine in half because the sticks they come as are really thick)
Next to it line up a 2-3 cucumber sticks.
On top of both crab and cucumber sticks, put a large slice of avocado.

The rolling part is tricky especially because the nori I got was only wide enough to go in a perfect circle and not a little extra wrap past where the nori begins like sushi usually looks. (I hope that made sense) So yeah just do your best. I also think my rice wasn't as sticky as it would be if I used the right vinegar, I'm guessing but not sure, so I just squeezed the rice onto the roll (like play dough) It worked great. For looks you can sprinkle sesame seeds on it. Enjoy your deliciousness with chop sticks!

  1. When I make sushi, I use sushi vinegar, which means you can take out that extra step. I just add it straight to the sushi. I found it in the Asian section at Smith's. Also, I usually chop up the crab sticks in a food processor, but that's because it takes out some of the fishy taste that I don't like.
